Ingredients
Cake
sunflower oil, for greasing
60g walnuts
300 g carrots, peeled and cut in pieces (3 cm)
3 large eggs (4 free range)
350 g brown sugar
50 g sour cream or 50 g crème fraîche
160 g sunflower oil
250 g wholemeal flour
1 tsp bicarbonate of soda
½ tsp ground nutmeg
2 tsp ground cinnamon
½ tsp fine sea salt
Cream cheese icing
1 Tbsp granulated sugar
1 orange, thin peelings of skin only
300 g cream cheese
15 - 30 g honey
- Preheat Oven to 160c.
- Chop nuts if required smaller by placing in TM bowl and chop for 1 second on speed 4. set aside
- Place carrots into bowl and grate for 4 seconds on speed 7. set aside
- Put oil, eggs, sugar into TM bowl.
- Mix 5 seconds on speed 7.
- Add flours, baking powder, bicarbonate of soda and spices.
- Mix for 5 seconds on speed 5.
- Add nuts, carrots, raisins and mix for 5-10 seconds on Counter-clockwise operation and speed 2 to blend.
- Check to see all are incorporated.
- If not use spatula to incorporate.
- Turn into prepared tins and bake for 45mins to 1 hour until the skewer comes out clean.
Icing
To make icing place orange rind with icing sugar into TM bowl and mix speed 9 for 20 seconds.Add cream cheese and mix speed 9 for 15-20 seconds until smooth, one can add some milk if icing needs to be thinner.

300 g carrots = £0.02/100g = £0.06
3 large eggs = £3.2/12 units = £0.8
350 g brown sugar =
- Granulated sugar: £1/ 1kg ➡️ 350g = £0.35
- 50 g sour cream or 50 g crème fraîche ➡️ £1.8/300ml = £1.8
- 160 g sunflower oil = ~£0.17/100ml = £0.272
- 250 g wholemeal flour
- Plain White Flour: £1/1.5kg ➡️ 250g = £0.17
- Cake only total: £1.652 + sour cream = £3.452
1 orange = £0.45
300 g cream cheese = £2.45 x 2 = £4.9
Cream only total: £5.35
Grand total: £8.80
